Rainbow Sugar 

You Will Need:• four cups of sugar • one cup of water• a glass jar

• a lolly stick

•   Pour the water in a saucepan, and carefully heat it up.•   Add two cups of the sugar into the saucepan of water. Stir it until it dissolves. Be very careful because the mixture will be really hot - make sure you don't boil it at any time!
•   When the sugar's dissolved, add in the other two cups of sugar and again stir it until it has dissolved.
•   Take the sugar off the heat and keep stirring until the mixture has completely cooled down.
•   Add in your choice of food colouring to dye the sugar. The more you add the brighter the colour will be. •   Pour the mixture into a glass jar - a coffee jar is ideal. Fill the jar to to the top. Before you do this make sure you've washed the jar out thoroughly and that the sugar solution is fully cooled.•   To make the sugar crystals, tie some pieces of string to a lolly stick. Make sure the bits of string are longer than the height of the jar.
•   Dangle the strings into the jar and balance the lolly stick across the top of the jar. Then sit back and wait for your crystals to grow.
•   After about a day you should have some crystals formed - but the longer you leave it, the more crystals you'll get. When you've got a full string of sugar, take it out the jar and leave it to dry. •   When it's dry, snap the sugar of the string and put it in a Pestle and Mortar. Grind the crystals into smaller bits. Or you could put the crystals in a sandwich bag and bash them with a rolling pin.•   Try experimenting with different food colourings to get a complete rainbow of colours.
